Job Title:    Sous Chef  

 THIS IS A UNION POSITION

Job summary:   

The Sous Chef assists the Chef de Cuisine in the daily kitchen operations including menu development, purchasing, inventory, and cost control. They will also have an active role working in the kitchen side by side with the staff.  

Core Responsibilities:  

Skills/Abilities/Competencies:   

  • Oversees food production and presentation. 

  • Prepares food to recipe specifications.   

  • Works with team to cook all food to proper specifications in a timely manner.   

  • Creates menu specials as needed to utilize leftover product.  

  • Takes lead on catering and in house event prep.  

  • Contributes to the kitchen processes and procedures. 

  • Complies with all food & safety sanitation laws and regulations.  

  • Performs quality checks on ingredients and prepared dishes ensuring proper food temperatures are maintained and food is stored correctly.   

  • Keeps workstation, coolers, and equipment clean, organized, sanitized, and sufficiently stocked.   

  • Sets up and operates kitchen equipment.   

  • Establish and maintain work relationships, providing opportunities to develop skills. 

  • With the chef de Cuisine, resolves operational issues. 

  • Performs opening, closing and side work duties as instructed and according to proper guidelines.   

  • Performs other duties assigned.   

  • Assists Chef de Cuisine with baking  

  • Maintains employee check lists and prep lists  

Qualifications

Education and Experience:  

  • Three (3) plus years of related experience.    

  • Ability to read and understand recipes and food abbreviations.   

  • Ability to move rapidly and coordinate multiple orders.   

  • Ability to work in a fast-paced environment.   

  • Attentive and detailed oriented.
