Job Purpose: The Assistant Food & Beverage Manager supports the overall leadership and daily operation of the hotel’s restaurant, bar, and beverage program. This role is ideal for a first-time manager looking to develop supervisory and operational skills in a high-volume, service-focused environment. The position is hands-on, guest-facing, and heavily involved in maintaining service standards, beverage inventory integrity, and operational controls.
Work Schedule
- Primarily nights, weekends, and holidays based on business levels.
- Flexibility required for special events, banquets, and peak occupancy periods.
Key Responsibilities
Restaurant & Bar Operations
- Supervise nightly restaurant and bar operations to ensure consistent, high-quality service aligned with DoubleTree brand standards.
- Maintain visible presence on the floor during peak periods; support servers, bartenders, and hosts as needed.
- Ensure opening and closing procedures are completed accurately and consistently.
- Assist in managing table turns, wait times, seating flow, and overall guest experience.
- Resolve guest concerns promptly and professionally, using service recovery tools when needed.
Beverage Inventory, Controls & Compliance
- Lead weekly beverage inventory with emphasis on accuracy, documentation, and cost controls.
- Monitor bar pars, requisitions, breakage logs, waste tracking, and secure storage of all alcohol.
- Oversee beverage receiving, invoice posting, and coordination with Accounting to ensure proper cost alignment.
- Assist with beverage ordering and vendor communication.
- Support Responsible Vendor/TIPS compliance and training.
Team Leadership & Development
- Supervise and coach restaurant and bar associates on service standards, guest interaction, and Hilton brand expectations.
- Participate in daily pre-shift meetings and assist in training new employees.
- Provide feedback, coaching, and corrective action in a constructive, developmental manner.
- Promote a positive, team-oriented environment that supports employee engagement and retention.
Financial & Operational Controls
- Assist with POS oversight, void/comps approvals, menu maintenance, and end-of-shift reporting.
- Monitor labor productivity and ensure compliance with scheduling and timekeeping guidelines.
- Support forecasting of beverage needs based on occupancy, group business, and seasonal patterns.
- Help maintain cleanliness, readiness, and organization of all F&B front-of-house spaces.
Safety, Sanitation & Compliance
- Ensure compliance with all state and local alcohol service laws.
- Uphold sanitation and safety standards consistent with Hilton, the City of New Orleans, and the Louisiana Department of Health.
- Conduct routine inspections of service areas to ensure readiness and compliance.
- Promote and enforce safe work practices across all F&B operations.
