Overview
A Director of Food & Beverage serving Canopy by Hilton is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviors, skills, and values that follow:
Key Responsibilities
- Lead all front- and back-of-house F&B operations with a visible, hands-on presence and a “lead from the front” mindset.
- Forecast revenue, manage budgets, control COGS, and drive profitability across five distinct outlets.
- Recruit, train, and motivate both seasonal and year-round teams, with the ability to scale operations up or down as needed.
- Ensure each venue delivers consistent, high-quality service that meets or exceeds Exell and Hilton brand standards.
- Develop and execute operational plans; analyze product mix and pivot away from underperforming items.
- Maintain full compliance with Utah DABS regulations; oversee alcohol inventory, comp policy, and purchasing.
- Lead banquet and event service execution with a focus on precision, adaptability, and guest satisfaction.
- Manage venue managers and entertainment budgets to align with overall F&B strategy.
- Stay ahead of market trends through competitive analysis, adjusting pricing and offerings as needed.
- Provide ownership with regular reporting on performance metrics, strategic initiatives, and opportunities for improvement.
- Foster a culture of respect, accountability, and continuous learning across the entire F&B team.
