Job Title: Chef de Cuisine

Location: Kissimmee, FL

Position Summary

The Chef de Cuisine is responsible for leading the culinary vision and daily kitchen operations of Eleven Rooftop Restaurant. This individual will embody creativity, precision, and leadership, ensuring that each dish reflects the sophistication and contemporary flair that define the Eleven experience. The Chef de Cuisine will uphold the highest standards of quality, consistency, and presentation while fostering a culture of excellence within the culinary team.

 

  • Direct and oversee all culinary operations to ensure flawless execution of menu items and service.
  • Maintain the highest standards for ingredient quality, preparation, and presentation, with an emphasis on freshness and seasonality.
  • Collaborate with the Executive Sous Chef on menu innovation, seasonal features, and special events that align with the restaurant’s elevated concept.
  • Conduct daily line checks to ensure readiness, consistency, and adherence to specifications.
  • Supervise the day-to-day operations of the kitchen, ensuring smooth service flow and proper staffing coverage.
  • Oversee all administrative functions including scheduling, ordering, month-end inventories, and food cost analysis.
  • Maintain accurate production records and ensure compliance with established financial targets, including food and labor cost goals.
  • Implement and enforce systems for cost control, portioning, and waste management.
  • Recruit, train, mentor, and motivate kitchen staff to deliver exceptional culinary results and maintain a positive, professional work environment.
  • Conduct regular performance evaluations and provide ongoing coaching to support staff growth and retention.
  • Promote teamwork and communication within the kitchen and across departments to ensure seamless collaboration and guest satisfaction.
  • Ensure all products are received, stored, and rotated in accordance with proper FIFO and sanitation standards.
  • Maintain compliance with all health department regulations, OSHA requirements, and company safety protocols.
  • Oversee equipment maintenance and cleanliness; ensure all kitchen tools and machinery are in safe working order and that any repair needs are promptly addressed.
  • Uphold impeccable standards of cleanliness, safety, and organization in all heart-of-house areas.
  • Work in partnership with restaurant management to ensure that culinary offerings enhance the overall guest experience.
  • Support member and guest events, wine dinners, and special holiday functions with creativity and precision.
  • Serve as a brand ambassador for Eleven Rooftop Restaurant, maintaining professionalism, warmth, and attention to detail at all times.
  • Attend required leadership and departmental meetings.
  • Maintain timely completion of reports, inventories, and administrative tasks.
  • Adhere to all Reunion Resort & Golf Club policies, procedures, and standards of conduct.
  • Perform additional duties as assigned to support the overall success of the restaurant and resort.

Qualifications

  • Qualifications

  • Minimum of 5 years of progressive culinary leadership experience in a fine dining or upscale restaurant environment.
  • Proven ability to manage high-volume, high-quality operations with creativity and composure.
  • Strong understanding of cost controls, purchasing, and inventory management.
  • Excellent leadership, communication, and organizational skills.
  • Culinary degree or equivalent professional experience preferred.
