JOB SUMMARY: 

Half Acre Beer Co. is seeking a qualified individual to execute daily production sampling and coordinate the sensory program within the Half Acre Quality Department.  The Half Acre Laboratory and Sensory Technician will be responsible for conducting daily micro- and molecular biological sampling, chemical measurements, and other laboratory needs as they arise. This individual will be tasked with interpreting micro, molecular, and chemical results and communicating findings with the Quality Manager. The sensory responsibilities include organizing and maintaining routine sensory checks and assisting with other aspects of the sensory program. This position reports to the Quality Manager. 

DUTIES/RESPONSIBILITIES: 

  • Maintains inventory of lab reagents, aliquots, and consumables 

  • Cleans and sanitizes labware and surfaces daily to uphold a clean and organized lab environment.  

  • Prepares culture media and pours microbiological plates 

  • Aseptically collects samples, plates for microbiological analysis, and interprets growth results 

  • Performs routine yeast cell counts and viability testing; tracks and reports yeast lineage and slurry history 

  • Collects samples for microbial enrichment and performs qPCR testing; interprets and reports results 

  • Collects in-process samples and conducts routine quality checks, including extract, pH, and temperature readings; may require navigating the cellar and collecting samples directly from tanks 

  • Performs spectrophotometric-based assays, including sample prep for organic chemistry analysis 

  • Measures titratable acidity and turbidity as required 

  • Releases bright beer tanks (BBTs) and packaged goods from Quality Hold when specifications are met 

  • Collects, stages, and retrieves packaged beer samples for sensory evaluation and archival 

  • Schedules sensory sessions in the DraughtLab platform and monitors participation and results for daily, pre-package, and end-of-life tastings. 

  • Maintains sensory stations, including glassware, samples, and appropriate testing environment 

  • Assesses raw materials as needed, including hop pellet density, lot based aroma profiling, and steeped sensory evaluations 

  • Enters data into appropriate systems and records for interpretation and reporting 

  • Assists in drafting, reviewing, and updating Standard Operating Procedures 

  • Calibrates and maintains laboratory instruments per manufacturer and internal guidelines 

  • Performs general lab maintenance and cleaning as outlined in the Lab Upkeep Checklist 

  • Participates in cross-functional quality initiatives and supports investigations into quality incidents or concerns 

  • Supports training of new hires and cross-departmental team members on lab functions and protocols 

Qualifications

REQUIRED SKILLS/ABILITIES:

  • Hold self accountable for maintaining a clean and organized work environment 

  • Operate efficiently and responsibly as the sole Quality and Sensory Lab Technician 

  • Be detail-oriented and thorough in all laboratory work and documentation 

  • Perform aseptic technique regularly and effectively 

  • Maintain a clean, safe, and well-functioning lab, mindful of GLP requirements 

  • Organize a large amount of samples and provide clear and timely results 

PREFERRED EDUCATION & EXPERIENCE: 

A 4-year college degree in microbiology, biochemistry, chemistry, molecular biology, or food science, OR, at least one year of professional or academic experience in a microbiological, food science, brewery, or similar, lab is required. Some background and interest in sensory science is preferred. Must be proficient in aseptic technique and basic lab duties. A passion for craft beer and fundamental understanding of the beer production process is preferred. 

PHYSICAL REQUIREMENTS: 

  • Must be able to lift 30 lbs.  

  • Must be able to maneuver 165 lb. kegs into position  

  • Must be able to navigate ladder while sampling from tanks
