Description

We are seeking a dedicated and experienced Restaurant Manager to join the prestigious Fairview Dining Room team located at Washington Duke Inn & Golf Club in Durham. The Fairview Dining Room is renowned for defining fine dining in Durham, offering regional American specialties paired with impeccable service. The elegant ambiance, accentuated by live piano music on Fridays and Saturdays, elevates the overall dining experience. Every meal at this AAA Four Diamond rated restaurant is crafted with culinary mastery and meticulous attention to detail.

As one of our Restaurant Managers, you will play a pivotal role in maintaining the high standards of service and hospitality that our guests expect. Reporting to the Fairview Dining Room Manager, you will oversee all aspects of restaurant operations, including staff training, guest satisfaction, and ensuring a seamless dining experience.

Key Responsibilities:

  • Supervise and coordinate all aspects of restaurant operations, focusing on server training, fine dining etiquettes, and wine knowledge.
  • Ensure compliance with company policies and procedures, including proper attire, punctuality, and clock in/out procedures.
  • Implement and uphold safety standards, reporting any unsafe conditions promptly.
  • Develop and maintain employee schedules in accordance with staffing guides and weekly forecasts, avoiding overtime.
  • Oversee reservation management and guest seating, ensuring efficient service during peak periods.
  • Monitor guest satisfaction and promptly address any complaints or issues.
  • Coordinate promotional programs and special events, including Vista Catering events.
  • Manage beverage stock and rotation to minimize spoilage.
  • Attend departmental and organizational meetings as required.
  • Control labor and food & beverage costs within budgetary limits.
  • Liaise with the restaurant chef, hotel management, and external vendors as necessary.
  • Prepare and file reports on restaurant activities.
  • Answer incoming calls and inquiries promptly.
  • Evaluate and review restaurant employees in line with hotel policies.
  • Ensure staff compliance with laws governing the sale of alcohol.
  • Supervise cash and credit card transactions.
  • Participate in hotel recycling programs.
  • Perform any additional duties assigned by the Director of Food and Beverage.
