Description

Responsible for preparing side and sushi items for our guests in accordance with portioning, recipe and service guidelines. Primarily works in front of guests while preparing foods at the sushi bar. Monitors and ensures the portioning of foods prepared at the sushi bar and maintains the cleanliness and sanitation of the sushi bar and equipment.

  • Follow recipe and/or product directions for preparing sushi, all specified menu items, work with a sense of urgency to meet time goals while adhering to recipe standards, and display an attention to detail and food presentation.
  • Taste the product, follow the menu, estimate food requirements, check production and keep records in order to accurately plan production requirements and requisition supplies and equipment.
  • Follow food safety regulations and standards to include temperature/time tracking for food and equipment.
  • Clean and sanitize workstation and equipment.
  • Identify and inform the Chef regarding any problems on station.
  • Maintain proper stocking of assigned station.
  • Assist Chef in menu preparation, service and breakdown.
  • Capable of working in public on live stations and maintain superior appearance standards.
  • Perform other job-related duties as requested.
  • Knows the proper methods of cutting fish, meat and vegetables. Knows how to handle fish and ingredients for sushi preparation. Properly makes sushi rice.
  • Continually checks the quality of raw and cooked products.
  • Prepares, cooks, and garnishes food.
  • Checks temperature of refrigerator and of food.
  • Keeps kitchen areas clean.
  • Follow all guidelines for timely food service to guests.
  • Certified in Food Service sanitation.
  • Knowledge of Shady Canyon Golf Club Food Standards.
  • Employee may perform other related duties to meet the ongoing needs of the company as requested by the supervisor.

Qualifications

  • Knowledgeable of sushi style techniques and cooking methods
  • Minimum of 3-years’ experience as a sushi cook in a high-volume culinary operation preferred.
  • Must be capable of following directions and possess good recall and memory.
  • Knowledge of standard knife skills, kitchen equipment and supplies, including, but not limited to toasters, refrigerators, and coolers, slicers and beverage machines.
  • Knowledge of health, safety and sanitation regulations
  • Able to effectively communicate in English, in both written and verbal forms.
  • Excellent customer service skills and interpersonal skills to effectively communicate.
  • Strong organizational skills and ability to work in stressful, fast paced environment.
  • High school diploma or equivalent
  • Work varied shifts, to include weekends and holidays.
  • Able to work standing majority of shift.
