Description

SUMMARY: The sous chef is responsible for assisting the Executive Chef on the day-to-day culinary operations. Functions include menu creation, food purchasing, and maintenance of quality standards. A sous chef will also assist in cost controlling and maintaining food cost, and supervises storage, stocking, and sanitation procedures. The sous chef assists in the management and training of new personnel, scheduling staff work hours, and doing performance reviews.

Qualifications
  • Ability to communicate clearly with managers, kitchen and dining room employees, and guests.
  • Must have experience calculating figures and amounts and performing mathematical functions to meet the business needs.
  • Ability to perform assigned duties with attention to detail, speed, accuracy.
  • Allow through, courtesy, cooperativeness and work with a minimum of supervision.
  • Ability to work well under pressure of organizing and attaining production
    schedules.
  • Ability to use all senses to ensure quality standards are met including vision, taste and smell.
  • Ability to operate, clean and maintain all equipment required in job functions.
  • Ability to work all stations in kitchen.
  • Punctuality and regular, reliable attendance.

 

EDUCATION AND/OR EXPERIENCE:

  • Minimum 2-5 years cooking experience in a fine dining environment and experience in a culinary leadership role preferred
  • Culinary graduate preferred.
  • High school or GED graduate.

 

LANGUAGE SKILLS:  

  • Ability to read, comprehend and provide instructions in English, both written and verbal.
  • Bi-lingual in Spanish preferred.

 

COMPUTER SKILLS:

  • Proficient in Outlook and Internet applications.

 

CERTIFICATES & LICENSES:

  • Safe Food Handling Certification
  • Must provide valid document(s) to work in the US.
  • Valid California Driver License is required (for specific positions).

 

WORK ENVIRONMENT:
The work environment at Company ranges from wintertime lows of 30 degrees to summertime highs to 80+ degrees. While performing these duties the employee may be exposed to outdoor and inclement weather conditions.

 

PHYSICAL DEMANDS:
While performing the duties of this job, the employee must be able to:

  • Ability to bend, stand, and stoop for long periods of time, and working long hours in hot conditions
  • Use hands to finger, handle, or feel; and talk or hear.
